I currently have 1gbs Fiber with an Adtran ONT connected to a Eero 6+ that feeds my POE switch running my cams and what ever else is plugged into it. The Cameras are set to static IP and my eero's DHCP is set to auto.

When changing to Adtran ONT > UI Cloud Gateway Ultra > TP-Link switch >cam's, access points, ect. (I know im getting a USW 16 port pro switch im just poor right now) The subnet IP is likely going to change, how big of a mess is that going to make for me to get things up and working.

And just leave the gateway as that ip set to static?
+1 to what @wittaj said....

Log into the router using its LAN IP and change its LAN IP to the same subnet as the cameras which may require you to adjust the router's DHCP server pool to suit the range of the new subnet.

The router's LAN IP is generally the same as it's gateway IP but in the case of my router connected to my fiber ONT it also specifies a "remote gateway IP" which is in actuality my static and public WAN IP.
