Your hardware selections are fine, and there is no reason to get more than 16 GB of RAM at this point.
Got it up and running . Some issues last week with a memory leak. But this was solved with a an older graphics driver.
For those who want to know.
-I-7700K. / asus H110m a/m2 , 16 GB RAM , 125GB SSD. 2x external USB3 3GB HD.
-14 HD Hikvision (3MP)/2x Dahua Cams (4MP) running at 15 FPS
-4 Of the above cams are duplicated.
-The 16 Cams: direct to disk 24/7 on the 2 USB HArd disk
The system is running at 20-22% , with peaks when triggers occur to 25-26 % with all 20 cameras enabled.
