    On the Record tab for the cameras, under Options, you can set a Pre-trigger video buffer in seconds. You might play around with that. Do note though that in the Help documentation it talks about enabling this can impact performance so keep that in mind as you test.

    I don't use z-wave (I'm insteon based) but I know it works great with HomeSeer. Interface is a z-stick plus. Not an inexpensive option but a super flexible and expandable option. I'm a really impressed and satisfied user. I think it checks all your boxes.

    Multiple blue iris servers on one phone.

    In the app, you need to go into settings and add another server. There you specify the IP, user, and password. Then when you start the app, it will allow you to select which one you want to access and then logs you in. I have two locations with BI and it works well.

    My home automation is based on HomeSeer. There are several ways to connect Arduinos to HS. The one I am using is a plugin that has a base app for the Arduino that handles wifi connectivity and messaging. I only have to add the code to manage the sensors themselves.
